Vegan Bigos/Polish Stew Recipe (Revolution in Bloom)

Revolution in Bloom’s vegan bigos recipe gives us the chance to try something that we have never tried before, namely; Polish cuisine. Bigos is a thick and hearty polish stew, traditionally it is a meat stew but this vegan version offers all of the taste but none of the cruelty or health concerns associated with meat-eating. Serve with bread, rolls or boiled potatoes for an authentic taste of Poland.

  • 1 package Sauerkraut
  • 4 cubes Not-Beef bouillon cubes Brand: Edward and Sons
  • 7 cups Filtered water
  • 4 cloves garlic minced
  • 1/2 cup Onion finely diced
  • 3/4 cup Canned crushed tomatoes
  • 2 tbsp Tomato paste
  • 1/2 cup Red wine
  • 1 tsp Sugar or sweetener of choice
  • 1/2 package Vegan ground beef crumbles You can use any vegan meat substitute
  • 1 pinch Sea salt or to taste
