Vegan Date Syrup
YIELD: 1½ CUPS
- 20 Medjool dates
- Water to soak
- 1⅓ cups additional water
- Place the dates into a medium bowl. Cover with water and top with a salad plate. Let soak for 8 hours, drain, and replace the water, and then allow the dates to soak an additional 4 to 6 hours.
- Drain the dates completely and then remove the seeds and tops of the dates. Place into a blender along with 1⅓ cups water and blend until extremely smooth, scraping down the sides often.
- Store in an airtight container in the refrigerator for up to 1 month.
