Vegan Grain-Free Peanut Butter Cookies Recipe (Kathy Patalsky)

Kathy Patalsky’s healthy and enticing peanut butter cookies that are both grain-free and sugar-free, instead using Medjool dates as a natural sweetener. Serve alongside a glass of your favourite dairy-free milk or with a warm cup of tea/coffee.

Ingredients
  • 10-12 Natural Delights Medjool Dates pitted and soaked for at least 20 minutes in hot water (blends into about 2/3 cup date paste)
  • 1/3 cup salted peanut butter crunchy or creamy -- almond butter or sun butter works too!
  • 1 cup coconut flour I DIY-ed my flour, see below for details
  • 1/2 tsp vanilla extract optional
  • 3/4 tsp baking powder + 1/2 tsp apple cider vinegar optional
  • 2 tsp warm water as needed
  • 1/4 tsp cinnamon optional
  • Optional add-in: 1/2 cup vegan chocolate chips
  • Optional date-paste add-in: 1-3 Tbsp water if needed
