Vegan Pink Coleslaw Recipe

Ingredients:

  • 10 oz finely shredded white cabbage
  • 2 Tbsp vegan ranch dressing (You can always add more if you want a creamier, richer coleslaw)
  • 1 tsp apple cider (or red wine vinegar)
  • ¼ tsp black pepper
  • ½ cup shredded beets (raw or cooked)
  • ½ cup red onion (thinly sliced)
  • 1-2 tsp maple syrup – optional
  • optional add-ins: 1 small apple (chopped – 1/4 cup sauerkraut – 2-3 Tbsp raisins)
