Vegan Pink Coleslaw Recipe (Kathy Patalsky)

Ingredients
  • 10 oz finely shredded white cabbage
  • 2 Tbsp vegan ranch dressing You can always add more if you want a creamier, richer cole slaw
  • 1 tsp apple cider or red wine vinegar
  • ¼ tsp black pepper
  • ½ cup shredded beets raw or cooked
  • ½ cup red onion thinly sliced
  • 1-2 tsp maple syrup - optional
  • optional add-ins: 1 small apple chopped - 1/4 cup sauerkraut - 2-3 Tbsp raisins
